Olive oils are the best monounsaturated heart-healthy fats when it comes to cooking. High phenolic EVOOs contain more antioxidants and anti-inflammatories than olive oil and provide more health protective benefits. Like a good bottle of wine, polyphenol content varies with the olive variety and the harvest time.
